Tucked away from the city centre of Sapporo, in a nondescript neighbourhood is Bistro Hiro. You will probably notice this place as its the only shop with its frontage done up with a clean modern industrial minimalist look.
This restaurant is run by a husband (the chef) and wife team, with a seating capacity of about no more than 20 people at a single seating. The interiors have a very homely and warm feeling which was very different to it’s exterior, with a nice private dining area hidden away should one want some privacy when dining.
Menu is decided when reservation is being made and the chef will cook for you based on the price you want and of course based on the ingredients he can get for that season. Relatively simple and fuss free dining, except I would have loved a menu of what I was having with description on it.
Dinner started off quite well, which showed some promise for a very good ending. However, this chef seems to like food that are a little overly salted, despite that, the food churned out were quite delicious. Had the seasoning of the food been spot on, I would have given this place a 4 acorns instead.
One of the best dish that night, the flavours were delicately balanced and the first time I had celeriac puree.
Another well executed dish, fresh ingredients were key to make this dish successful.
Overall, the chef has interesting ideas and his strong passion for food can be shown through his food. However there is a need for him to control the seasoning a little better. It may be a one off thing, but first impression are usually the lasting impression.
